The goal of this hearty soup is to help new mothers regain their digestive fire.
There is a lot of ginger in here to help that process along. The lentils are a great source of essential nutrition to help through possible exhaustion, sleepless nights, or busy schedules.
This soup is easy to heat up and accessibility makes this soup a great dish for postpartum recovery. Triple this batch if you have family and friends supporting you or if you know another mother going through postpartum.

POSTPARTUM LENTIL SOUP
INGREDIENTS
1 cup dried brown lentils
1 medium onion dicedÂ
2 medium carrots small dicedÂ
2 medium potatoes small dicedÂ
2 cloves of garlic minced
2 tbsp fresh ginger minced
1 tbsp curry powder
3 cups vegetable stockÂ
4 oz spinachÂ
1 13 oz can coconut milk
 1 tbsp oil
1 tsp salt or to taste
PREPARATION
- Heat up the pot and put the oil in. Add the onions, and sauté until they start to become tender.
- Add garlic, ginger, curry powder and sauté until fragrant and soft.
- Add remaining ingredients and bring to a boil.
- Bring heat down to a simmer and cover.
- Simmer until all ingredients are cooked through.
- Serve hot and enjoy.
